“LOUIS LESAFFRE CUP” BAKING COMPETITION

Eight artisan baking teams from North and South America will vie for a coveted spot in the 2012 Coupe du Monde de la Boulangerie (Bakery World Cup) in Paris in this exciting regional qualifier. Teams will compete against the clock to produce a variety of baked goods in the following categories:

  • Bread includes making a variety of traditional baguettes, sandwich loaves, specialties of the country and worldwide specialties.
  • Viennese Pastry gives teams the chance to work on a wide variety of international products and specific national products while using the techniques that highlight their unique expertise.
  • Artistic Piece involves producing a composition that conveys the identity of each team's country and requires enormous creativity and technical mastery.

Judging will be done by a jury of baking professionals from outside the Americas to guarantee total objectivity and ensure that there are no professional or personal links between jury and participants. Jury members judge the products according to criteria such as weight and volume compliance, taste, appearance, originality, creativity, risk taking and time-spent.

IBIE is proud to be selected by The Bread Bakers Guild of America and Lesaffre Yeast Corporation as the host site for their prestigious international qualifying competition, which promises to be an inspiring and educational experience. Stop by the competition area in the back Central Hall, Sunday, September 26 through Tuesday, September 28 during show hours. Winners will be announced on the last day of the show, Wednesday, September 29.

10TH ANNUAL PILLSBURY BAKER'S PLUS GRAND CHAMPION CREATIVE DECORATING COMPETITION

This competition is good enough to eat! On September 26-29, 2010 contestants will compete head-to-head for the championship title. Held over the three days of the show in front of a live audience on the tradeshow floor, the competition will be judged based on the following categories:

The highest scoring individual, as determined by a panel of judges, will be awarded the coveted Pillsbury Baker's Plus Grand Champion Trophy, sponsored by General Mills. Gold, silver, and bronze medals will also be awarded for the highest three scores in each category. Over $14,000 in prize money will be awarded to competitors and their sponsoring bakeries and affiliates.

WORLD CHOCOLATE MASTERS REGIONAL QUALIFIER

IBIE, along with the three leading brands for high quality chocolate, Callebaut, Cacao Barry and Carma, will host the U.S. national selections for the World Chocolate Masters. Watch chocolatiers, pastry chefs and other chocolate professionals create an exquisite chocolate showpiece, a chocolate pastry, two different pralines and a gastronomic chocolate dessert.

A professional jury will judge all creations on their presentation, taste and technical application. The winner will be granted the title of National Chocolate Master 2011, will receive national and international press, a coveted prize package and the ability to leverage the recognition received to boost his or her career. The National Chocolate Master 2011 will also win the ticket to next final of the World Chocolate Masters, where twenty of the world's best craftsmen will compete for the title of World Chocolate Master 2011.

The Champion Trophy along with silver and bronze trophies will be awarded for the highest three scores overall.
